Ingredients
- 12 quail eggs
- 2 tbsp mayo
- 1 tsp mustard
- Paprika and chives for garnish
Instructions
- Boil quail eggs for 4 minutes, then immediately transfer to an ice bath to cool.
- Peel eggs carefully and cut each one in half lengthwise.
- Scoop the yolks into a small bowl and mash with mayo and mustard until smooth.
- Pipe or spoon the yolk mixture back into the egg white halves.
- Top each with a dusting of paprika and snipped fresh chives.
